This highland Arabica from Central America is a light coffee with a medium extract content. The drink has a subtle, muted aroma, and its perfectly balanced bouquet is set off by a slight sourness.
In the south of Mexico, in the state of Chiapas, the El Triunfo reserve is spread over 120 thousand hectares, which became a UNESCO heritage in the 90th year of the last century. It is on its territory that the Nuevo farm operates.
Mexico is considered to be the leader in coffee production in all of Central America. Home to several globally recognized coffees, the country is now one of the world's largest exporters. The plantations of Mexico are ideal for growing coffee. Trees grow at an altitude of 400 m and up to 1.5 km above sea level, on fertile volcanic soils. It is the composition of the local land that is responsible for the slightly pleasant sourness of the drink. The local coffee is not very strong, but it is distinguished by its exquisite taste and bright aroma.
Mexicans export only half of their coffee, because they themselves are very fond of the drink. As a rule, the main consumer of export coffee from Mexico is the USA, but it is not uncommon in other countries as well.
The best is the coffee bean grown on the plantations of the southern region of Chiapas. The state gave its name to one of the most sought-after Mexican coffees. The spice of taste and low strength have become a distinctive feature of this drink.
Another famous variety, Oaxaca, is grown in the state of the same name. Sweet, with nutty and vanilla notes, which can grow stronger as it cools, this coffee has become one of the finest examples of the Mexican coffee industry.
Recommended preparation method: grind coffee beans to the required degree of grinding and cook according to your desire: in a turkish, in a filter, in a coffee maker, in a French press, in an espresso machine at the rate of 8-10 grams (2 teaspoons) per 1 cup of volume 200 ml. Coffee is prepared at a water temperature of 90-96 degrees (not brought to a boil).
